Ingredients

  • 1 recipe Anytime Wheat Muffins
  • 1 cup whole milk ricotta
  • 1 cup packed shredded spinach
  • 3 tablespoons diced chives

Instructions

  • Prepare the muffins as directed, decreasing the milk to ½ cup (120 ml) and adding the ricotta cheese to the wet ingredients.
  • Fold in the spinach and chives before dividing the batter among the muffin cups.
