Roasted Asparagus
Just like grilling, roasting is another very healthy method of cooking as it uses minimal oil. So it was obvious that a recipe of roasted asparagus would have to be included.
Ingredients
- 1 Cup Trimmed Asparagus Spears
- 1/3 Cup Sliced Shallots
- 1/2 Cup Cherry Tomatoes
- 1 1/2 Teaspoon Fresh Chopped Thyme
- 1 Teaspoon Olive oil
- Salt and Pepper to Taste
Instructions
- In a small bowl, mix together olive oil, thyme, salt and pepper.
- In a pre-greases baking dish, layer the asparagus, shallots and tomatoes.
- Pour the dressing mixture on top.
- Bake for 6 minutes at 400 degrees or until tender but crispy.
