Ingredients

  • 4 c. zucchini grated and drained
  • 2 c. rice cooked
  • 1 1/2 c. mozzarella cheese grated, divided
  • 1 1/2 c. Parmesan cheese grated, divided
  • 2 eggs
  • 1 pound hamburger
  • 1 medium onion chopped
  • 2 cloves garlic chopped
  • 1 15 1/2-oz. jar spaghetti sauce
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the grated zucchini, cooked rice, eggs, and half of both the mozzarella and Parmesan cheeses.
  • Press the zucchini mixture evenly into the bottom of a greased 13x9x2-inch baking dish to form the crust.
  • Bake the crust for about 15 minutes, or until it is lightly browned and firm.
  • While the crust is baking, prepare the topping.
  • In a large skillet, brown the hamburger over medium-high heat.
  • Drain the fat.
  • Add the chopped onion and minced garlic to the skillet and cook until tender.
  • Stir in the spaghetti sauce, salt, and pepper.
  • Spread the hamburger mixture evenly over the pre-baked zucchini crust.
  • Sprinkle the remaining mozzarella and Parmesan cheeses over the top.
  • Bake for another 15 minutes, or until the cheese is completely melted and bubbly.
