Ingredients

  • 2 pounds boneless skinless chicken breasts, cut into 1 to 2-inch pieces
  • 8 fluid ounces General Tso’s sauce
  • 4 fluid ounces cornstarch
  • 4 fluid ounces all-purpose flour
  • Salt and pepper to taste
  • 2 eggs scrambled
  • 2 fluid ounces green onion chopped
  • 2 fluid ounces shaved almonds

Instructions

  • Preheat the air fryer to 200°C (400°F).
  • Set up three shallow bowls: one with cornstarch, one with scrambled eggs, and one with flour.
  • Season the chicken pieces with salt and pepper to taste.
  • Dip each piece of chicken into the cornstarch, then the scrambled eggs, and finally the flour, shaking off any excess.
  • Place the coated chicken pieces in a single layer in the air fryer basket.
  • Cook in the air fryer for approximately 10 minutes, or until the chicken is crispy on the outside and cooked through.
  • In a medium-sized mixing bowl, toss the cooked chicken with the General Tso’s sauce until evenly coated.
  • Return the coated chicken to the air fryer basket and cook for an additional 2 to 4 minutes, or until the sauce is caramelized and the chicken is very crispy on the outside.
  • Serve the General Tso chicken over white rice and garnish with chopped green onions and shaved almonds.
