Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable shortening
  • 2 eggs beaten
  • 1 tablespoon almond extract
  • 1/2 cup blanched unsalted almonds

Instructions

  • In a bowl, mix the dry ingredients.
  • Cut the shortening into the dry ingredients using a fork or pastry cutter.
  • Add the beaten eggs and almond extract.
  • Stir with a spoon until well mixed.
  • Preheat the oven to 325ºF.
  • Shape the dough into balls the size of a large cherry.
  • Place the dough balls on greased cookie sheets.
  • Press an almond into the center of each cookie to slightly flatten.
  • Bake for 15 to 25 minutes or until lightly browned.
