Ingredients

  • 1 large cauliflower
  • 3 tbsp. clarified butter or olive oil
  • 1/2 tsp. chili powder
  • 1/2 tsp. coriander
  • 1/2 tsp. curcumin
  • 1/2 tsp. asafoetida
  • 1 onion small chopped
  • 2 cloves garlic
  • 1 hot chilli small chopped
  • 2 tsp. ginger chopped
  • 1 diced tomatoe
  • 2 tbsp. fresh cilantro chopped

Instructions

  • Cut the vegetables into small florets.
  • Heat oil in pan over medium-high heat and add the cauliflower and sautee for a few minutes.
  • When it starts to brown, add the chopped condiments and spices, cover and reduce heat.
  • When the cauliflower is cooked, pour into a serving dish, sprinkle with the diced tomato and sprigs of fresh coriander.
