Ingredients

  • 1 cups of corn bread crumbled
  • 1 can of enchilada sauce 10 ounces
  • ½ teaspoon of salt
  • 1 ½ pounds of ground beef
  • 1 can of tomato sauce 8 ounces
  • ½ cup of shredded Mexican-style cheese blend

Instructions

  • Preheat the oven to 350° F.
  • Combine the corn bread, ½ cup of the enchilada sauce, and salt in a large bowl.
  • Crumble the ground beef over the mixture and mix well.
  • Roll into 1-inch balls.
  • Using a lightly greased rack in a baking pan, bake the meatballs uncovered for 18 to 20 minutes.
  • The meatballs are done when they are no longer pink.
  • Meanwhile, heat the tomato sauce and remaining enchilada sauce in small saucepan.
  • Drain the meatballs, then place them in a serving dish.
  • Cover the meatballs with the heated sauce and sprinkle with cheese.
  • You may want to serve these meatballs with toothpicks.
