Chilled Apple & Cheese Salad

As a girl, I was convinced that I didn’t like gelatin salads. But when my Aunt Clara served this at an anniversary party, I found I had been mistaken!

Ingredients

  • 3- oz. pkg. lemon gelatin mix
  • 1 c. boiling water
  • 3/4 c. cold water
  • 2/3 c. red apple cored and finely chopped
  • 1/3 c. shredded Cheddar cheese
  • 1/4 c. celery chopped

Instructions

  • In a bowl, dissolve gelatin in boiling water.
  • Stir in cold water; chill until partially set.
  • Fold in remaining ingredients.
  • Pour into a 3-cup mold.
  • Cover and chill 3 hours, or until firm.
  • Unmold onto a serving plate.
