Ingredients
- 1.8 kg meaty beef veal, lamb, or venison bones
- 1 tablespoon tomato paste
- 1 large onion roughly chopped
- 2 large carrots roughly chopped
- 2 celery stalks roughly chopped
- 4 garlic cloves peeled and crushed
- 2 bay leaves
- 2 teaspoons whole black peppercorns
- ¼ bunch fresh parsley
- 4 sprigs fresh thyme
- 2 liters cold water
Instructions
- Preheat the oven to 450°F (230°C).
- Arrange the bones in a large roasting pan and roast for 15 minutes.
- Brush or stir the tomato paste over the bones until evenly coated.
- Add the onion, carrots, celery, and garlic to the roasting pan and roast for another 10 minutes.

- Add the bay leaves, peppercorns, parsley, thyme, and cold water.
