Ingredients

  • 1 tablespoon Tomato Paste
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Light Brown Sugar
  • 1 cup Diced Spanish Onion
  • 1/4 cup Garlic Cloves smashed after measuring
  • 2 cups Water
  • 1 tablespoon Dark Chili Powder
  • 2 tablespoons Fresh Lime Juice
  • 8 ounces Guava Paste cut up
  • 1/2 teaspoon Kosher Salt

Instructions

  • Combine all the ingredients in a nonreactive saucepan.
  • Place over medium heat and bring to a simmer.
  • Reduce the heat and simmer for 20 to 30 minutes, until the onion and garlic soften.
  • Transfer the mixture to a blender and blend until smooth.
  • Be cautious of hot liquid splattering.
  • Use immediately or allow to cool to room temperature before storing in an airtight container in the refrigerator for up to 4 weeks.
