Ingredients

  • 1/2 cup carob powder
  • 1/2 cup honey
  • 1 cup almond or cashew butter
  • Unsweetened coconut for rolling

Instructions

Mix Carob and Honey:

  • In a mixing bowl, combine the carob powder and honey.
  • Stir until well blended and smooth.

Add Nut Butter:

  • Add the almond or cashew butter to the carob-honey mixture.
  • Stir until all ingredients are thoroughly combined and a dough-like consistency forms.

Form Balls:

  • With slightly wet hands, scoop out small portions of the mixture and roll them into balls between your palms.
  • Aim for approximately 1-inch diameter balls.

Roll in Coconut:

  • Roll each ball in unsweetened coconut until fully coated.
  • This will give them a delightful texture and flavor.

Chill:

  • Place the coated balls on a plate or baking sheet lined with parchment paper.
  • Transfer the plate or baking sheet to the freezer and chill the balls for at least 30 minutes, or until firm.

Serve:

  • Once chilled, remove the carob energy balls from the freezer.
  • Serve them immediately as a refreshing cold treat, or store them in a freezer-safe container for later enjoyment.
