Hearty Sausage and Bean Stew
Ingredients
- 1 tablespoon olive oil
- 3 pounds Kielbasa sausage cut into bite-size pieces
- 3 onions diced
- 3 cloves garlic minced
- 3 cans 16 ounces each kidney beans, drained and rinsed
- 3 cans 14.5 ounces each diced tomatoes, drained
- 1 can 14.5 ounces beef broth
- 1/2 cup long-cooking rice uncooked
- 1/3 cup fresh basil chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
Instructions
- Heat olive oil in a large stockpot over medium heat.
- Add Kielbasa sausage, diced onions, and minced garlic.
- Cook until golden; drain any excess oil.
- Add the drained kidney beans, drained diced tomatoes, beef broth, uncooked long-cooking rice, chopped fresh basil, Italian seasoning, dried oregano, and dried parsley to the pot.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low and let the stew simmer for 1 1/2 hours, stirring occasionally.
