Tomato and Spinach Frittata
Serve this light andtasty frittata on one of those lazy weekend mornings. Pour yourself a mimosa,find a series you’ve been meaning to watch and crawl right back under thecovers to enjoy your special breakfast in bed.

Ingredients
- 5 large eggs
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ cup fresh baby spinach leaves
- 1 large spring onion peeled and diced
- 110 grams goat cheese crumbled
- 1 large Roma tomato cored and sliced
Instructions
- Preheat air fryer at 160°C for 3 minutes.
- In a medium bowl, whisk together eggs, salt and pepper.
- Stir in spinach, shallot and goat cheese.
- Pour mixture into a cake barrel lightly greased with olive oil.
- Place tomato slices on top.
- Place barrel in air fryer basket and cook for 14 minutes.
- Transfer to a cooling rack to cool for 5 minutes in cake barrel, then slice and serve warm.
