Ingredients

  • 1 red onion sliced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 can 400g black beans, rinsed and drained
  • 1 can 400g kidney beans, rinsed and drained
  • 1 can 400g corn kernels, drained
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • Juice of 1 lime
  • Fresh cilantro chopped
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add red onion and bell peppers, cook until softened, about 5-7 minutes.
  • Add garlic, cumin, chili powder, smoked paprika, and cayenne pepper (if using).
  • Cook for 1 minute.
  • Add black beans, kidney beans, and corn kernels.
  • Cook for 5-7 minutes, stirring occasionally.
  • Stir in lime juice, salt, and pepper.
  • Remove from heat and stir in fresh cilantro.
  • Serve warm.
