Ingredients
- 1 avocado chopped
- 1 large red onion thickly sliced
- 1 lime cut into 4 wedges, for serving
- 1 orange capsicum sliced
- 1 red capsicum sliced
- 1 tablespoon fajita or peri peri seasoning
- 1 tablespoon olive oil
- 1 yellow capsicum sliced
- 2 baby cos lettuces shredded
- 2 chicken breast fillets cut into strips
- 4 tablespoons sour cream
- 4 wholemeal tortilla wraps
- Coriander leaves handful, roughly chopped
- Sea salt flakes to taste
Instructions
- Preheat the air fryer to 190ยฐC.
- Place the chicken strips, red capsicum, orange capsicum, yellow capsicum and red onion in a large bowl. Drizzle with olive oil and toss thoroughly.
- Add the fajita or peri peri seasoning and sea salt flakes, then toss again until the chicken and vegetables are evenly coated.
- Transfer the mixture to the air fryer basket and cook for 15 minutes, stirring once or twice, until the chicken is thoroughly cooked and the vegetables are tender and lightly browned.
- Warm the tortilla wraps briefly in a dry frying pan or microwave.
