Crispy Air Fryer Potato Wedges

Ingredients
- 4 sebago potatoes about 850 g, scrubbed, unpeeled and cut into wedges
- Black pepper freshly ground, to season
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- Sauce or dips of choice to serve
- Sea salt flakes to season
- 1 teaspoon smoked paprika
- 2 tablespoons vegetable or sunflower oil
Instructions
- Place the potato wedges in a large heatproof bowl and cover with cold water.
- Soak for 30 minutes, drain, cover with boiling water and soak for a further 15 minutes.
- Drain well and pat the wedges completely dry with a clean tea towel.
- Toss the wedges with the oil, smoked paprika, oregano and onion powder.
- Season with sea salt flakes and freshly ground black pepper.
- Preheat the air fryer to 200ยฐC.
- Cook the wedges for 30 to 40 minutes, shaking every 10 minutes, until golden and crisp.
- Serve immediately with your choice of sauce or dips.
