Notes & Wine Advice
Serving Suggestions
Serve these sticky Brussels sprouts warm as a vegetable side dish with rice, noodles, tofu, chicken, or grilled dishes. They also work well as a snack or part of a larger selection of Side Dish recipes.Recipe Notes
Stir the Brussels sprouts every 5 minutes so they cook evenly and become coated with the reducing glaze. Halve larger sprouts so they become tender at approximately the same time as the smaller ones. Keep an eye on the glaze during the final few minutes because the sugar in the sweet chili sauce can caramelize quickly.Variations
Use balsamic vinegar for a slightly sweeter and rounder flavour or black vinegar for a deeper, sharper flavour. Increase the hot sauce for more heat or reduce it for a milder version. Fresh cilantro can be omitted when preferred.Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer until hot. The glaze will thicken further after refrigeration, so the Brussels sprouts may be slightly stickier after reheating.Wine Advice
A slightly aromatic white wine works best with the sweet, sour, and spicy glaze. Choose a Riesling with enough freshness to balance the sweetness and chilli heat.Nutrition values

About Sticky Sweet Chili Brussels Sprouts
Sticky Sweet Chili Brussels Sprouts turn a simple vegetable into a boldly flavoured side dish with very little preparation. The Brussels sprouts are combined with shallots and coated in Thai sweet chili sauce, vinegar, and a little hot sauce before being cooked in the air fryer. As they cook, the sprouts become tender and lightly charred while the sauce gradually reduces around them. The result is a glossy, sticky coating that combines sweetness, acidity, and gentle heat.
The air fryer is particularly useful for this recipe because its circulating heat cooks the vegetables while helping moisture evaporate from the glaze. Instead of ending with Brussels sprouts sitting in a thin sauce, the liquid becomes concentrated and clings to the vegetables. You can find more dishes prepared with this method in our Airfryer recipes.
Why Brussels Sprouts Work with Sweet and Sour Flavours
Brussels sprouts have a distinctive savoury flavour that works especially well with contrasting ingredients. Thai sweet chili sauce supplies both sweetness and mild chilli heat, while black vinegar or balsamic vinegar adds the acidity needed to keep the glaze from becoming overly sweet. Hot sauce provides another layer of heat without requiring a long list of spices.
The shallots also play an important role. Their natural sweetness develops as they cook, while their savoury onion flavour gives the glaze more depth. Fresh cilantro is added only after cooking so its fresh character remains noticeable against the warm, sticky vegetables.
Getting the Best Texture in the Air Fryer
Size matters when preparing Brussels sprouts. Smaller sprouts can remain whole, but larger ones should be halved so everything becomes tender at roughly the same time. Stirring every five minutes is equally useful. It exposes different surfaces to the hot circulating air and repeatedly redistributes the glaze as it thickens.
The final few minutes are when the biggest change occurs. The Brussels sprouts become increasingly caramelized while the sauce changes from relatively fluid to thick and glossy. Because sweet chili sauce contains sugar, it is worth checking the pan closely near the end. You want a sticky glaze and lightly charred edges rather than burnt sugar.
Serving the Brussels Sprouts
These sprouts are versatile enough to serve as a vegetable accompaniment or warm snack. They work particularly well alongside rice, noodles, tofu, grilled vegetables, or poultry. For a larger meal, combine them with dishes from the Vegetables or Side Dish collections.
The sweet and spicy character also makes them suitable for informal sharing. Serve them in a bowl with small forks or toothpicks as part of a Party spread. Unlike plainly roasted Brussels sprouts, the sticky glaze gives them enough flavour to stand on their own without an additional dipping sauce.
Variations and Storage
Black vinegar gives the recipe a deeper and slightly more complex acidity, while balsamic vinegar produces a sweeter result. The amount of hot sauce can easily be adjusted according to preference. If you want less heat, use only a few drops. For a hotter version, increase it gradually while keeping the balance between sweet, sour, and spicy flavours.
Leftovers can be refrigerated in a covered container for up to three days. Reheating them in the air fryer is preferable to using a microwave because dry circulating heat helps restore some of the roasted texture. The glaze will remain sticky, although reheated sprouts will naturally be softer than freshly cooked ones.
When storing, preparing, or serving vegetables and other ingredients, follow current FDA food safety guidance. With its short ingredient list and approximately twenty-minute cooking time, this recipe is an easy way to turn Brussels sprouts into a sweet, tangy, spicy Snack or flavourful vegetable side dish.
