Ingredients

  • 8 Large Eggs
  • Cup 1% Milk
  • ¾ Teaspoon Kosher Salt Divided
  • ¼ Teaspoon Ground Black Pepper
  • ¾ Cup 3 Ounces Crumbled Feta Cheese
  • Cup About 1 ⅓ Ounces Shredded Cheddar Cheese
  • 2 Tablespoons Salted Butter
  • ½ Cup Frozen Chopped Onions
  • ½ Cup Frozen Chopped Green Bell Peppers
  • ½ Cup Frozen Sliced White Mushrooms
  • ½ Cup Frozen Chopped Spinach

Instructions

  • In A Medium Bowl, Whisk Together Eggs, Milk, ½ Teaspoon Salt, And Black Pepper.
  • Mix In Feta And Cheddar.
  • Set Aside.
  • Heat A 12″ Oven-Safe Skillet Over High Heat.
  • When Hot, Add Butter, Onions, Green Peppers, Mushrooms, Spinach, And Remaining ¼ Teaspoon Salt.
  • Sauté Until Vegetables Soften, About 3–4 Minutes.
  • Reduce Heat To Medium And Add Egg Mixture.
  • Do Not Stir.
  • Once The Eggs Have Set Along The Outside Edge Of The Skillet, About 2 Minutes, Transfer The Skillet To The Oven And Bake For 12 Minutes.
  • Turn On The Broiler And Broil On High For 2 Minutes Until Golden Brown.
  • Serve Immediately.
