Ingredients

Makes about 2 cups

  • 1 pound plum tomatoes peeled and chopped
  • 2 tablespoons chopped onion
  • 1 medium garlic clove finely chopped
  • ¼ teaspoon salt or to taste
  • 2 teaspoons olive oil

Instructions

  • Put the tomatoes, onion, garlic, salt, and ¼ cup water in a blender and blend until smooth.
  • Heat the oil in a medium saucepan over medium heat until it shimmers.
  • Add the tomato mixture gently to the hot oil (to minimize splattering), and bring to a boil.
  • Reduce the heat to low, cover and cook, stirring frequently, about 12 minutes, or until the onion no longer tastes raw.

Notes & Wine Advice

The sauce is ready to use, or cover and refrigerate up to 5 days or freeze up to 3 months.
