Ingredients

Serves: 4

  • ½ tsp olive oil
  • ½ medium red bell pepper julienned
  • ½ medium green bell pepper julienned
  • ½ small red onion julienned
  • 1 garlic clove minced
  • Salt and black pepper to taste
  • 3 avocados pitted and peeled
  • 2 tsp fresh lime juice
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp cumin powder
  • ½ tsp paprika
  • cup crumbled queso fresco cheese

Instructions

  • Heat olive oil in a skillet over medium heat and add bell peppers and onion.
  • Sauté for 4 minutes or until tender and stir in garlic.
  • Cook for 30 seconds or until tender.
  • Turn heat off.
  • Mash avocados in a bowl using a potato masher or fork to your desired consistency.
  • Add remaining ingredients including pepper mixture but leaving a little cheese for garnish.
  • Fold in well.
  • Garnish with cheese and serve guacamole.
