Homemade Sweet Potato Hash Browns

Ingredients
- 1 teaspoon butter or margarine
- 2 tablespoons vegetable oil divided
- 1 medium onion finely diced
- 1 tablespoon light brown sugar
- 1 medium baking potato peeled and shredded
- 1 medium sweet potato peeled and shredded
- 1 large egg lightly beaten
- 3 tablespoons all-purpose flour
- ½ teaspoon salt
- ½ teaspoon pepper
- 4 slices of cooked bacon crumbled
Instructions
- In a large nonstick skillet, melt the butter and 1 tablespoon of vegetable oil over medium heat.
- Add the finely diced onion and sauté for about 15 minutes or until it becomes golden.
- Add the brown sugar and continue to cook for an additional 5 minutes, stirring frequently.
- In a large bowl, combine the sautéed onion, shredded baking potato, shredded sweet potato, lightly beaten egg, all-purpose flour, salt, pepper, and crumbled bacon.
- Mix everything together until well combined.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
- Drop ¼-cup portions of the potato mixture into the skillet for each hash brown pancake.
- Flatten them with a spatula and cook the pancakes in batches for about 5 minutes on each side or until they turn golden brown and crispy.
