Ingredients

Makes 20 squash puppies / Prep: 10 min., Fry: 6 min. per batch

  • ¾ cup self-rising cornmeal
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon ground red pepper
  • 6 medium-sized yellow squash cooked and mashed
  • ½ cup buttermilk
  • 1 small onion minced
  • 1 large egg
  • Vegetable oil
  • ½ teaspoon salt

Instructions

  • In a large bowl, combine the first 5 ingredients.
  • In another bowl, stir together the mashed squash and the next 3 ingredients.
  • Add this mixture to the cornmeal mixture, stirring until well blended.
  • Pour vegetable oil into a deep cast-iron skillet to a depth of ½ inch.
  • Heat it to 350°F.
  • Drop the batter by tablespoonfuls, in batches, into the hot oil.
  • Fry for about 3 minutes on each side or until they turn golden brown.
  • Drain the squash puppies on paper towels and sprinkle them evenly with ½ teaspoon of salt.
  • Enjoy your Squash Puppies, which can be served as a delightful side or as a tempting appetizer!
