Triple Bean Delight
Ingredients
- 2 pounds ground chuck
- 1 large yellow onion chopped
- 1 large green bell pepper chopped
- 2 14 1/2-ounce cans diced tomatoes with garlic and onion, undrained
- 1 15-ounce can tomato sauce
- 1 15-ounce can kidney beans, rinsed and drained
- 1 15-ounce can black beans, rinsed and drained
- 1 15-ounce can black-eyed peas, rinsed and drained
- 2 1.6-ounce envelopes chili seasoning
- 2 cups water
- 1/4 teaspoon ground red pepper
- 1 tablespoon sugar optional
Toppings:
- shredded Monterey Jack-Colby cheese
- chopped green onions
- sour cream
- corn chips
Instructions
- Cook the ground chuck, yellow onion, and green bell pepper in a large Dutch oven over high heat for 10 minutes, stirring until the beef crumbles and is no longer pink.
- Drain the excess fat and return the mixture to the pan.
- Stir in diced tomatoes, tomato sauce, kidney beans, black beans, black-eyed peas, chili seasoning, water, and ground red pepper.
- Add sugar if desired.
- Cook over medium-high heat for 20 minutes.
- Serve with desired toppings like shredded cheese, chopped green onions, sour cream, and corn chips.
