A fundamental and traditional Spanish salad enjoyed throughout different regions of Spain, the San Isidro-Style Mixed Salad features essential ingredients like onion, tomato, lettuce, and tuna. Feel free to add optional ingredients such as asparagus and olives for an extra layer of flavor.
Ingredients
- Serves 4:
- 2 tablespoons extra-virgin olive oil
- 4 tablespoons red wine vinegar
- Salt to taste
- Freshly ground black pepper to taste
- 1/2 head romaine lettuce rinsed and torn into pieces
- 2 medium tomatoes cut into eighths
- 3 thin slices medium onion
- 3 to 4 ounces jarred white or light meat tuna preferably Spanish, drained and flaked
- 4 jarred white asparagus, rinsed, trimmed, and cut in half crosswise (optional)
- 12 small green olives with or without pimiento, preferably Spanish
Instructions
- In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and freshly ground black pepper.
- In a salad bowl, combine the romaine lettuce, tomato slices, onion slices, flaked tuna, white asparagus (if using), and green olives (if using).
- Pour the vinaigrette over the salad, toss gently to coat all the ingredients, and serve the San Isidro-Style Mixed Salad at room temperature.
