Ingredients

For the Pie Shell:

  • 1 cup almonds soaked and drained
  • 1 cup dates pitted and sliced
  • 1/2 teaspoon vanilla extract

For the Filling:

  • 8 large strawberries
  • 5 dates pitted and sliced
  • 2 ripe bananas
  • 1 tablespoon lemon juice
  • 2 pints strawberries quartered
  • 1/2 pint strawberries halved

Instructions

Prepare Pie Shell:

  • In a food processor, combine soaked and drained almonds, sliced dates, and vanilla extract.
  • Blend until the mixture forms a sticky dough-like consistency.
  • Press the mixture evenly into the bottom and sides of a pie plate to form the pie shell.

Prepare Filling:

  • In the same food processor (no need to wash), blend together the 8 large strawberries, sliced dates, ripe bananas, and lemon juice until smooth.

Combine Filling:

  • Transfer the blended mixture into a mixing bowl.
  • Add the quartered strawberries and gently stir to combine.

Assemble Pie:

  • Pour the strawberry filling mixture into the prepared pie shell.
  • Decorate the top of the pie with the halved strawberries.

Chill and Serve:

  • Chill the pie in the refrigerator for at least 1 hour before serving.
  • Optionally, freeze the pie and thaw slightly before serving for a cooler treat.
