Ingredients

  • 10 oz 280 g butterflied lamb leg roast
  • 1 tbsp olive oil
  • 1 tsp thyme fresh or dried
  • ½ tsp black pepper
  • 1 tsp egg fresh or dried

Instructions

  • Preheat the air fryer to 180°C (360°F).
  • In a mixing plate or bowl, combine the olive oil, thyme, black pepper, and egg.
  • Pat the lamb roast dry, then coat it evenly in the herb oil mixture.
  • Place the lamb in the air fryer basket.
  • Cook for 15 minutes for medium-rare, checking the internal temperature—140-150°F (60-65°C).
  • For a more well-done roast, continue cooking in 3-minute intervals until the desired doneness is reached.
  • Remove the roast from the air fryer, cover with kitchen foil, and let it rest for 5 minutes to allow the juices to redistribute.
  • Slice against the grain and serve.
