  • Preheat the air fryer to 180ยฐC.
  • Place 4 eggs in the air fryer basket and cook for 8 minutes.
  • Transfer the eggs immediately to ice-cold water. Leave to cool, then peel.
  • Combine the sausage meat, bacon, sage and mixed herbs in a large bowl.
  • Divide the sausage mixture into four portions.
  • Lay a piece of baking paper on the work surface and flatten each portion into a disc.
  • Place a peeled egg in the centre and mould the sausage mixture evenly around it to enclose completely.
  • Roll each Scotch egg in the flour.
  • Beat the remaining 2 eggs in a bowl and coat each Scotch egg in the beaten egg.
  • Press into the panko breadcrumbs until evenly coated.
  • Preheat the air fryer to 200ยฐC.
  • Lightly spray the Scotch eggs with oil, if using.
  • Air fry for 20 minutes, until golden and the sausage meat is cooked through.
  • Serve warm with mustard, if desired.
