Makes 4 servings
Prep: 10 min.
- 6 fresh apricots halved (about ½ pound)*
- 1 11.5-ounce can apricot nectar
- ¼ cup sugar
- 1½ cups Champagne **
- Crushed ice
Garnishes:
- fresh apricot slices
- fresh mint sprigs
Instructions
- Process first 3 ingredients in a blender until smooth, stopping to scrape down sides.
- Stir in Champagne, and serve immediately over crushed ice.
Notes & Wine Advice
Garnish, if desired.
*1 (17-ounce) can apricot halves, drained, may be substituted for fresh.
**1 (12-ounce) can ginger ale may be substituted for Champagne.
