Baked Avocado with Burrata and Blistered Tomatoes
This dish is creamy times two: avocado and Burrata cheese are two velvety powerhouses which, when served with fresh tomatoes and basil, will blow your mind.

Ingredients
- 8 medium cherry tomatoes
- 2 teaspoons olive oil
- 2 medium avocados halved, pitted and left in skins
- ¼ teaspoon salt
- 110 grams Burrata cheese
- 2 tablespoons julienned fresh basil
Instructions
- Preheat air fryer at 190°C for 3 minutes.
- Toss tomatoes in olive oil in a small bowl.
- Place avocado halves, cut sides up, in ungreased air fryer basket.
- Scatter tomatoes around avocado halves.
- Cook for 7 minutes.
- Place avocado halves on four small plates.
- Add two tomatoes to each half.
- Sprinkle salt over tomatoes.
- Tear Burrata cheese and evenly distribute over tomatoes.
- Garnish with basil.
- Serve.
