Ingredients

  • 3 lb. beef chuck roast
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 18 oz. bottle barbecue sauce
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. smoked paprika
  • 1/2 tsp. chili powder
  • 1/4 tsp. black pepper
  • Salt to taste

Instructions

  • Season the beef chuck roast with salt and pepper.
  • Heat a large skillet over medium-high heat.
  • Sear the roast on all sides until browned.
  • Place the chopped onion and minced garlic in the bottom of the slow cooker.
  • Place the seared roast on top of the onion and garlic.
  • In a bowl, combine barbecue sauce, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, and black pepper.
  • Pour the sauce over the roast.
  • Cover and cook on low for 8 hours, or until the roast is tender and shreds easily.
  • Shred the roast with two forks and stir it into the sauce.
  • Serve hot.
