Ingredients

  • 1 whole chicken about 4 lbs
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp lemon zest optional
  • 1 lemon quartered (optional, for extra flavor)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Rinse the whole chicken under cold water and pat dry with paper towels.
  • Rub the chicken with olive oil, making sure it’s evenly coated.
  • In a small bowl, combine the garlic powder, onion powder, thyme, rosemary, paprika, salt, pepper, and lemon zest (if using).
  • Sprinkle the seasoning mixture evenly over the chicken, rubbing it in to coat all sides.
  • (Optional) Stuff the cavity of the chicken with the quartered lemon for extra flavor.
  • Place the chicken breast-side up in a baking dish or on a roasting rack.
  • Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the chicken.
  • Let the chicken rest for 10 minutes before carving.
  • Slice and serve with your favorite side dishes.
