Cajun Cod with Prawn Mango Salsa
The heat from the Cajun seasoning is tempered by the soothing mango, tomatoes and prawns in this decadent salsa.

Ingredients
For Prawn Mango Salsa
- ¼ cup chopped cooked prawns see Simply Prawns
- ¼ cup peeled and diced mango
- 1 medium Roma tomato cored, seeded and diced
- 1 ½ tablespoons peeled and diced red onion
- ¾ tablespoon chopped fresh parsley
- 2 teaspoons fresh lime juice
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
For Cod
- 2 170 gram cod fillets
- 2 teaspoons Cajun seasoning
Instructions
To make Prawn Mango Salsa:
- Combine all ingredients in a medium bowl.
- Refrigerate covered until ready to use.
To make Cod:
- Preheat air fryer at 350°F for 3 minutes.
- Season cod with Cajun seasoning.
- Place fish in air fryer basket lightly greased with olive oil.
- Cook cod for 10 minutes until opaque and flakes easily with a fork.
- Transfer cod to two medium plates and serve warm topped with salsa.
