Ingredients

For Prawn Mango Salsa

  • ¼ cup chopped cooked prawns see Simply Prawns
  • ¼ cup peeled and diced mango
  • 1 medium Roma tomato cored, seeded and diced
  • 1 ½ tablespoons peeled and diced red onion
  • ¾ tablespoon chopped fresh parsley
  • 2 teaspoons fresh lime juice
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

For Cod

  • 2 170 gram cod fillets
  • 2 teaspoons Cajun seasoning

Instructions

To make Prawn Mango Salsa:

  • Combine all ingredients in a medium bowl.
  • Refrigerate covered until ready to use.

To make Cod:

  • Preheat air fryer at 350°F for 3 minutes.
  • Season cod with Cajun seasoning.
  • Place fish in air fryer basket lightly greased with olive oil.
  • Cook cod for 10 minutes until opaque and flakes easily with a fork.
  • Transfer cod to two medium plates and serve warm topped with salsa.

Notes & Wine Advice

Altering This Recipe

The cod can be subbed out for any flaky whitefish, such as coral trout, bass or barramundi. If you want a little more kick, add a pepper such as a jalapeño, diced, to your salsa. And, if you like corriander, switch out the parsley for some of this fresh herb!
