Cheesy Roast Cauliflower with Prosciutto
Tender air-fried cauliflower topped with crispy prosciutto and melted Gruyรจre cheese. A rich and savoury vegetable dish that works beautifully as a side dish, lunch or light meal.

Ingredients
- 1 large cauliflower
- Olive oil for brushing
- Sea salt flakes to taste
- Black pepper freshly ground, to taste
- 4 slices prosciutto
- 1 tablespoon crรจme fraรฎche
- 75 g Gruyรจre cheese grated
- 1 small handful parsley chopped, for serving
Instructions
- Preheat the air fryer to 180ยฐC.
- Remove the leaves from the cauliflower and trim the base without cutting so much that the head collapses.
- Cut the cauliflower in half, then cut four slices approximately 2 cm thick from each half.
- Blanch the cauliflower slices in a large saucepan of boiling water for 3 minutes.
- Drain thoroughly and arrange the cauliflower in the air fryer basket.
- Brush with olive oil and season with sea salt flakes and freshly ground black pepper.
- Air fry at 180ยฐC for 10 to 15 minutes, until tender and golden, turning halfway through.
- Preheat the air fryer to 180ยฐC.
- Top each cauliflower slice with half a slice of prosciutto and a spoonful of crรจme fraรฎche.
- Sprinkle with Gruyรจre cheese and return to the air fryer for 5 to 10 minutes, until the cheese is melted and golden.
- Season with freshly ground black pepper and scatter with chopped parsley before serving.

Serve the Cheesy Roast Cauliflower with Prosciutto immediately while the Cheese is melted and the cauliflower is hot. It makes a rich Side Dish alongside meat or poultry, but the generous cauliflower slices are also substantial enough for a light Lunch.Recipe Notes
Keep part of the cauliflower stalk attached when cutting the slices. This helps hold the florets together during blanching and air frying. Cut the slices to a similar thickness so they cook at approximately the same rate. Drain the blanched cauliflower thoroughly before brushing it with olive oil. Excess surface moisture can prevent good browning in the air fryer.Variations
Gruyรจre gives the dish a rich, slightly nutty flavour, but another suitable melting cheese can be used when preferred.
