Ingredients
- ยฝ cup Breadcrumbs
- ยผ cup Brown Rice uncooked
- ยฝ cup Cheddar Cheese grated
- 1 large Egg White

- 4 medium Zucchini
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- Wash and dry the zucchini.
- Cut the ends from each zucchini.
- Slice each zucchini lengthwise into two equal halves.
- Use a spoon to hollow out the centres.
- Leave a shell approximately ยผ inch thick.
- Finely chop the removed zucchini flesh.
- Combine the brown rice, boiling water, onion, garlic, olive oil, kosher salt, and black pepper in a medium saucepan.
- Bring the mixture to a gentle simmer.
- Cover the saucepan.
- Cook for approximately 15 minutes until the water is absorbed.
- Add the chopped zucchini flesh and mushrooms.
- Cook for another 5 minutes while stirring occasionally.
- Remove the saucepan from the heat.
- Transfer the rice mixture to a mixing bowl.
