Chicken un Kraut

Ingredients
- 1 roasting chicken 3-4 lbs. (you can use a young duck if you prefer)
- 1 onion quartered
- 2 quarts sauerkraut
- 1 cup water
- 2 T. sugar
Instructions
- Preheat oven to 450°.
- Place chicken in a roasting pan; sprinkle with salt and pepper.
- Stuff the cavity with the onion.
- Add the sauerkraut and water around the chicken.
- Sprinkle sugar over the sauerkraut; cover and place the chicken in the oven, reducing the heat to 375°.
- Bake until chicken is cooked through and tender and juices run clear, about 1½ hours.
