  • 900 g tomatoes peeled and chopped
  • 700 g onions peeled and chopped
  • 3 red peppers seeded and chopped
  • 1 green pepper seeded and chopped
  • 1 aubergine chopped
  • 4 cloves garlic crushed
  • 350 g granulated sugar
  • 300 ml white wine vinegar or malt vinegar
  • 1 tablespoon coriander seeds crushed
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 2 teaspoons cayenne pepper

Instructions

  • Score the tomatoes, cover them with boiling water, drain, and remove the skins.
  • Chop the tomatoes, aubergine, onions, and peppers.
  • Place the vegetables and garlic into a large heavy-based pan.
  • Cook gently for about 30 minutes until the vegetables soften.
  • Add the sugar, vinegar, coriander seeds, paprika, salt, and cayenne pepper.
  • Stir until the sugar has completely dissolved.
  • Bring the mixture to a gentle boil.
  • Cook for about 1½ to 2 hours, stirring regularly, until the chutney becomes thick and glossy.
  • Ladle the hot chutney into sterilized jars.
  • Seal immediately with sterilized lids.
  • Store in a cool, dark place for at least one month before serving to allow the flavors to mature.
