Ingredients
FOR THE PASTA SALAD
- 1 lb. elbow pasta cooked
- 2 stalks celery chopped
- 1 red bell pepper chopped
- 1/2 c. black olives sliced
- parsley chopped for garnish
FOR THE DRESSING
- 3/4 c. mayonnaise
- 2 tbsp. red wine vinegar
- 1 tsp. sugar
- kosher salt
- Freshly ground black pepper
Instructions
- In a large bowl, combine elbows, celery, bell pepper and olives.
- Make dressing: In a medium bowl, combine mayonnaise, vinegar, and sugar.
- Season with salt and pepper and stir until combined.
- Pour dressing over pasta mixture and toss.
- Garnish with parsley and serve.
