Notes & Wine Advice

Serving Suggestions

Serve this potato salad chilled alongside grilled chicken, steak, salmon, burgers, or vegetable skewers. It is also suitable for picnics, barbecues, summer lunches, and buffet meals. Garnish it with fresh basil leaves immediately before serving.

Recipe Notes

Cook the potatoes only until fork-tender. Overcooked potatoes can break apart when folded into the dressing. Let them cool and drain thoroughly because excess water will make the creamy pesto thin. Fold the ingredients together gently to avoid crushing the potatoes and tomatoes.

Variations

Replace the pine nuts with walnuts, almonds, or cashews. Small mozzarella pearls can be used instead of cubed mozzarella. Add baby spinach, arugula, roasted peppers, red onion, or chopped cucumber for extra colour and texture.

Make-Ahead and Storage

Prepare the salad several hours before serving so the flavours have time to develop. Store it covered in the refrigerator and use it within three days. If the dressing thickens considerably, loosen it with a spoonful of Greek yogurt or a small splash of olive oil.

Wine Advice

A crisp Pinot Grigio complements the basil, tomatoes, and fresh mozzarella. A dry Sauvignon Blanc is another refreshing choice for serving this salad at a summer barbecue.

About Creamy Caprese Potato Salad

Creamy Caprese Potato Salad combines the familiar flavours of an Italian Caprese salad with the satisfying texture of tender red potatoes. Fresh basil, tomatoes, mozzarella, Parmesan, and olive oil provide the classic Mediterranean character, while Greek yogurt transforms the pesto into a creamy dressing. The result is a colourful side dish that feels substantial without relying on a traditional mayonnaise-based sauce.

This salad is particularly suitable for summer gatherings. It can be prepared in advance, travels well when properly chilled, and pairs with many grilled dishes. The red potatoes hold their shape better than floury varieties, making them a dependable choice for a salad that must be mixed and refrigerated before serving.

Creamy Caprese Potato Salad

The potatoes should be cut into evenly sized cubes so they cook at approximately the same rate. Add them to boiling water and begin checking after eight minutes. They should be easily pierced with a fork but remain firm enough to hold their shape. Overcooking will produce a soft salad that may turn into mash when the dressing is folded through it.

Rinsing the cooked potatoes briefly under cold water stops the cooking process. Allow them to drain completely and cool before adding the remaining ingredients. Warm or wet potatoes can soften the mozzarella and dilute the creamy pesto dressing. Cooling them properly therefore improves both the consistency and appearance of the finished dish.

Making the Creamy Pesto Dressing

The dressing begins with a simple basil pesto. Basil leaves, pine nuts, Parmesan, salt, and pepper are chopped together before lemon juice and olive oil are added. Pouring in the olive oil gradually helps create an even paste. Greek yogurt is processed into the pesto at the end, producing a smooth dressing with a pleasant tang.

Fresh basil gives the best colour and flavour. Remove any damaged or darkened leaves before measuring. Pine nuts provide traditional pesto flavour, but walnuts, almonds, or cashews are practical alternatives. When using salted nuts, reduce the added salt and taste the finished dressing before making further adjustments.

Italian Pesto Potato Salad

This Italian pesto potato salad gets its Caprese character from grape tomatoes and fresh mozzarella. Halving the tomatoes makes the salad easier to serve and allows their juices to mingle lightly with the dressing. Cubes of fresh mozzarella should be similar in size to the potatoes so each serving contains a balanced mixture.

Fold the ingredients together slowly with a silicone spatula. Vigorous stirring can crush the tomatoes and break the potatoes. Refrigerate the assembled salad for at least one hour so the dressing can thicken and the flavours can develop. For another fresh summer meal, serve it with our Balsamic Ribeye Steak Salad.

Serving and Safe Storage

Serve the salad chilled but not ice-cold. Taking it out of the refrigerator about 10 minutes before serving allows the basil, Parmesan, and olive oil flavours to become more noticeable. Garnish it with additional basil, tomatoes, mozzarella pearls, or toasted pine nuts for a more decorative presentation.

Keep the salad refrigerated until needed, particularly during warm weather. Do not leave dairy-based dishes at room temperature for extended periods. Store leftovers in a covered container and consume them within three days. Follow current FDA safe food-handling guidance when preparing, transporting, and storing dishes containing yogurt and fresh cheese.

Creamy Caprese Potato Salad offers a fresh alternative to conventional potato salad, combining tender potatoes with vibrant pesto, juicy tomatoes, and creamy mozzarella in every serving.
