Creamy Cherry Sandwich Cookies
Ingredients

For the Filling:
- 1/2 of an 8-ounce package cream cheese softened
- 1/2 cup powdered sugar
- 1/2 cup finely chopped drained maraschino cherries
- 1/4 tsp almond extract
For the Cookies:
- 60 vanilla wafers
For the Chocolate Coating:
- 12 oz chocolate-flavor candy coating coarsely chopped
- 2 tsp shortening
For Decoration:
- Desired jimmies or decors
Instructions
For the Filling:
- In a medium bowl, beat the softened cream cheese and powdered sugar with a mixer on medium speed until smooth.
- Stir in the finely chopped, drained maraschino cherries and almond extract.
Assemble the Sandwich Cookies:
- Spread the filling on the bottoms of half of the vanilla wafers.
- Top with the remaining wafers, placing the bottom sides down to create sandwich cookies.
- Chill the assembled cookies for 30 minutes or until the filling becomes firm.
For the Chocolate Coating:
- In a medium saucepan, cook and stir the chocolate coating and shortening over low heat until they are melted and smooth.
- Alternatively, you can use a microwave to melt the chocolate coating and shortening in a microwave-safe bowl.
- Microwave for 30 to 60 seconds, stirring every 30 seconds, until the mixture is melted and smooth.
Dip and Decorate:
- Using a fork, dip each sandwich cookie into the melted chocolate coating, turning to coat and allowing excess coating to drip back into the pan.
- Place the dipped cookies on waxed paper.
- Sprinkle the dipped cookies with your desired jimmies or decors.
- Let the cookies stand until the chocolate coating is set.

Storage:
Layer the dipped sandwich cookies between sheets of waxed paper in an airtight container. Store them in the refrigerator for up to 2 days. Do not freeze.
