Notes & Wine Advice
Serving Advice
Serve this creamy chocolate walnut fudge in small squares at room temperature for the softest texture. Its rich chocolate flavour and crunchy walnuts make it a delicious accompaniment to freshly brewed coffee, espresso or tea. Arrange the squares on a serving platter with other homemade Treats for a sweet dessert selection.Tips for Perfect Fudge
Stir the sugar, evaporated milk and marshmallow mixture frequently while bringing it to a boil, then continuously during the 6-minute cooking period. This helps prevent scorching and encourages the sugar to dissolve evenly. Once the hot mixture is poured over the chocolate and butter, stir until everything has melted and the fudge begins to thicken. Work quickly when adding the walnuts and transferring the mixture to the prepared dish, as the fudge starts to set as it cools. For easier cutting, line the baking dish with parchment paper and allow the fudge to become completely firm before slicing. Use a sharp knife, wiping the blade clean between cuts for neat squares.Walnut Advice
Use fresh walnuts with a mild, sweet aroma. Walnuts that have been stored for too long may develop a bitter or rancid flavour. For a deeper nutty taste, lightly toast the chopped walnuts in a dry frying pan before adding them to the fudge. Allow them to cool before use.Variations
Replace the walnuts with pecans for a slightly sweeter, buttery flavour. For a more intense chocolate taste, use dark chocolate chips instead of semisweet chocolate. A small pinch of sea salt can also help balance the sweetness. For a festive variation, add a little finely grated orange zest or a small amount of peppermint extract. Chocolate walnut fudge makes an attractive homemade gift. Cut the fudge into small, even squares and arrange them in a food-safe gift box with parchment paper between the layers. Keep the fudge chilled until gifting and include a note that it contains walnuts and dairy. Discover more ideas in our Gift-Giving recipes collection.Storage Advice
Store the fudge in an airtight container in the refrigerator for up to 1 week. Separate layers with baking parchment to prevent sticking. Allow the fudge to stand at room temperature briefly before serving for a softer texture. For longer storage, freeze individual portions in an airtight, freezer-safe container for up to 2 months. Thaw overnight in the refrigerator.Wine Advice
A lightly sparkling Moscato d’Asti provides a refreshing contrast to the rich chocolate and walnuts. Its gentle sweetness, delicate bubbles and fruity aromas help balance the fudge’s dense, creamy texture. Serve the wine well chilled and offer small portions of fudge, allowing the wine’s freshness to complement rather than compete with the sweetness of the dessert.Nutrition values
