————————————————————————————————–
This creamy garlic spinach combines tender spinach, slowly cooked onion, and fragrant garlic with a smooth dairy-free sauce. Unsweetened soy milk replaces traditional dairy cream, while a simple flour base creates the thick, comforting texture associated with classic creamed spinach. It makes an easy vegetable side dish for everyday dinners as well as holiday meals.
Frozen spinach works particularly well because it is convenient, available throughout the year, and already prepared for cooking. The result is a dependable side dish that requires very little preparation. Explore our Vegetable recipes for more easy ways to serve vegetables throughout the year.
Building the Flavour Slowly
Allowing the onion and garlic to cook gently before preparing the sauce makes a noticeable difference. The onion gradually becomes softer and sweeter, while the garlic flavours the nondairy butter. Keeping the heat relatively low prevents the garlic from burning and developing a bitter taste.
Once the onion is tender, flour is stirred directly into the mixture. This creates the base that will thicken the soy milk. Cooking the flour briefly before adding liquid also prevents the finished sauce from having a raw flour flavour.
Making a Smooth Dairy-Free Sauce
Add the soy milk gradually rather than pouring it into the pot all at once. Stirring continuously helps the flour disperse evenly and produces a smooth sauce without lumps. Once the mixture reaches a gentle boil, it will begin to thicken.
The frozen spinach can then be stirred directly into the sauce. Continue cooking until the spinach is completely heated and evenly distributed. If the sauce becomes thicker than you prefer, add another small splash of soy milk.
Serving Creamy Garlic Spinach
Vegan creamed spinach is especially good alongside roasted or mashed potatoes. The mild potato flavour provides an excellent base for the savoury, creamy sauce. Browse our Potato recipes for more combinations that work with vegetable sides.
It also pairs with roasted vegetables, plant-based roasts, casseroles, and other hearty main courses. Because spinach works well with traditional holiday dishes, this recipe is useful for Christmas and Thanksgiving menus. More accompaniments can be found in our Side Dish recipes.
Simple Flavour Variations
A small pinch of ground nutmeg is a classic addition to creamy spinach dishes and provides subtle warmth. Red pepper flakes introduce gentle heat, while nutritional yeast adds a savoury, slightly cheesy character without dairy.
Fresh lemon juice can be added just before serving when you want more acidity. You can also stir in chopped fresh herbs such as parsley or chives. For an even stronger garlic flavour, roast the garlic first and mash it into the sauce.
Storage and Reheating
Allow leftover spinach to cool before transferring it to a clean airtight container. Refrigerate promptly and use within three days. Reheat slowly in a saucepan over low heat and stir frequently. Add a little soy milk if the refrigerated sauce has become too thick.
Because this recipe contains soy milk and wheat flour, it is not suitable for soy-free, gluten-free, or wheat-free diets as written. For current recommendations about safely preparing, cooling, storing, and reheating food, consult the FDA safe food-handling guidance.
Easy to prepare, rich without dairy, and suitable for meals throughout the year, this creamy garlic spinach is a versatile vegetable side for family dinners, holidays, and special occasions.
