Notes & Wine Advice
Recipe Notes
Allow the risotto to cool properly before shaping the balls. Warm risotto remains too soft and can make the balls difficult to form. Wet your hands before shaping the risotto. This prevents the rice from sticking and makes it easier to create evenly sized balls. Freezing the coated risotto balls for 15 minutes helps them become firmer. As a result, they hold their shape better while cooking in the air fryer. Do not overcrowd the air fryer basket. Cook the balls in batches so hot air can circulate around them and create an evenly crisp panko coating. For the white wine, choose a dry Sauvignon Blanc, Pinot Grigio, Pinot Gris, or Pinot Blanc. Avoid heavily oaked wines because they can develop a bitter flavor during cooking.Wine Advice
A crisp Pinot Grigio pairs beautifully with the creamy Parmesan and mozzarella. Its fresh acidity also cuts through the richness of these golden risotto balls.Nutrition values

About This Recipe
Crispy Cheesy Risotto Balls combine creamy Italian-style risotto with Parmesan, mozzarella, and a crunchy panko coating. The rice balls become beautifully golden in the air fryer while the centre stays soft and cheesy. Serve them warm with mayonnaise and lemon wedges for a satisfying contrast of creamy, crisp, and fresh flavors.
Creamy Risotto with Parmesan and Mozzarella
The recipe starts with Arborio Rice, slowly cooked with onion, garlic, dry white wine, and vegetable broth. Adding the broth gradually allows the rice to develop its familiar creamy texture. Next, heavy cream, Parmesan, and mozzarella make the risotto even richer. These Cheese additions also help create the soft centre of each ball.
How to Get Crispy Risotto Balls
Cooling is essential when making air fryer risotto balls. First, allow the cooked risotto to cool before adding the egg yolks. Then, spread it over a tray and let it cool again. After shaping, coat each ball with panko and freeze briefly. This extra step firms the balls and helps them stay together during cooking.
Golden and Crunchy from the Air Fryer
A generous coating of cooking spray helps the panko turn crisp and golden in the Air fryer. Moreover, cooking the balls in batches gives the hot air enough room to circulate. Turn them halfway through cooking so every side develops an even crunch without deep frying.
Italian Finger Food for Sharing
Serve these Crispy Cheesy Risotto Balls as an Appetizer, savory Snack, or crunchy Fingerfood. They are especially useful for Game Day, a relaxed Weekend, or a table filled with Party dishes.
Finally, serve the air fryer risotto balls while they are hot and crisp. Mayonnaise makes a simple creamy dip, while fresh lemon adds brightness. You can also pair them with a warm Sauce for an easy variation.
