Ingredients

  • ½ cup Panko Breadcrumbs
  • Black Pepper freshly ground to taste
  • ½ pound Medium Shrimp peeled and deveined with tails intact
  • 1 cup Coconut Milk canned
  • Cooking Spray
  • ½ teaspoon Kosher Salt plus more to taste
  • 1 medium Lime zest finely grated
  • ½ cup Shredded Coconut unsweetened

For the Spicy Yogurt Dip

  • Black Pepper freshly ground to taste
  • 1 cup Coconut Yogurt or Dairy Yogurt
  • 1 small Cucumber halved and seeded
  • Kosher Salt to taste
  • 1 Serrano Chile seeded and minced

Instructions

  • Combine the shrimp, coconut milk, lime zest, and ½ teaspoon kosher salt in a medium mixing bowl.
  • Let the shrimp marinate for 10 minutes.
  • Combine the panko breadcrumbs and shredded coconut in a second medium mixing bowl.
  • Season the breadcrumb mixture with kosher salt and freshly ground black pepper.
  • Place a wire cooling rack over a baking sheet.
  • Remove a few shrimp at a time from the coconut milk marinade.
  • Allow the excess marinade to drip back into the bowl.
