Ingredients

  • 6 medium-sized potatoes
  • 3 Tbsp. lard butter, or margarine
  • 1 tsp. salt
  • dash of pepper
  • 2 eggs beaten

Instructions

  • Cook potatoes until soft.
  • Cool and skin.
  • Melt shortening.
  • Slice potatoes and slide into skillet.
  • Pour beaten eggs over and season.
  • Let potatoes brown until crispy edges form.
  • Then turn over with metal spatula, allowing other edges to brown.

Notes & Wine Advice

Variation:
Use only 4 or 5 potatoes. Begin by toasting 2 buttered slices of bread, torn in bite-sized pieces, in hot skillet. Then add potatoes and continue as above.
