Ginger Chicken Salad with Grapes and Walnuts

Ingredients
- 3/4 cup light mayonnaise
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 cups cooked chicken diced or shredded
- 1 1/2 cups red seedless grapes halved
- 1 cup sliced celery
- 1/3 cup sliced green onion
- 1/2 cup walnuts roughly chopped
Instructions
- In a large mixing bowl, combine the light mayonnaise, ground ginger, and salt.
- Stir until well mixed.
- Add the cooked chicken, halved grapes, sliced celery, sliced green onion, and chopped walnuts to the bowl.
- Gently toss all ingredients together until evenly coated with the dressing.
Serve:
- Serve the ginger chicken salad on a bed of lettuce leaves.
