  • 5 tbsp vegetable oil
  • ¾ tsp cumin seeds
  • 1 medium onion peeled and cut into fine half-rings
  • 2.5 cm fresh ginger peeled and cut into slivers
  • 5 garlic cloves peeled and chopped
  • 225 g fresh mushrooms thickly sliced
  • 450 g green beans trimmed and cut into 5 cm segments
  • 2 tsp ground coriander
  • tsp ground cumin
  • ½ tsp ground turmeric
  • ¾ tsp garam masala
  • ¾ tsp chilli powder
  • 1 tsp salt
  • 1 medium tomato coarsely chopped
  • 120 ml water

Instructions

  • Heat the oil in a wide pan over medium-high heat.
  • Once hot, add the cumin seeds and let them sizzle.
  • Add the onion and stir-fry until it turns brown.
  • Stir in the ginger and garlic, frying until the garlic begins to brown.
  • Add the mushrooms and stir-fry for 2 minutes.
  • Add the green beans, coriander, cumin, turmeric, garam masala, chilli powder, salt, tomato, and water.
  • Bring to a boil, then cover and lower the heat.
  • Simmer for 15 minutes until the beans are tender.
  • Remove the lid, increase the heat, and boil off most of the liquid, stirring gently.
