Serving Suggestions
Serve the cauliflower masala with brown rice, basmati rice, naan, crispy tofu, roasted chickpeas, or grilled vegetables. Fresh coriander, sliced spring onions, toasted sesame seeds, or a squeeze of lemon can be added immediately before serving.Recipe Notes
Drain the cauliflower thoroughly so excess cooking water does not thin the sauce. Whisk the chickpea flour completely into the cold coconut milk before heating it. Coarsely mash the florets rather than purรฉeing them so the finished dish retains some texture.Variations
White, purple, or orange cauliflower can replace green cauliflower. Add spinach, green peas, chickpeas, chilli flakes, turmeric, or fresh ginger. Use less salt for a lower-sodium version or add extra coconut milk when you prefer a thinner sauce.Storage
Refrigerate cooled leftovers in an airtight container for up to four days. Reheat them gently in a saucepan, adding a splash of coconut milk if the sauce has thickened too much. The dish can also be frozen for up to two months.Wine Advice

About Green Cauliflower Masala
Green Cauliflower Masala combines tender cauliflower with coconut milk, garam masala, garlic, tahini, and chickpea flour. The florets are cooked until tender and then coarsely mashed into the warmly spiced sauce. This creates a creamy plant-based dish that retains enough texture to work as either a main course or side dish.
Green cauliflower has a flavour and texture comparable to familiar white cauliflower, but its colour gives the finished dish a more distinctive appearance. White, orange, or purple cauliflower can be used without changing the preparation method. The recipe provides four portions and can be served throughout the year.
Cooking the Cauliflower
Cut the cauliflower into similarly sized florets before cooking. Uniform pieces become tender at approximately the same time and are easier to mash evenly. Cover them with water and cook until a fork passes through the stems without resistance.
Drain the cauliflower thoroughly before returning it to the saucepan. Water trapped between the florets can dilute the sauce and prevent it from thickening properly. Allowing the drained cauliflower to stand briefly in the warm saucepan helps residual moisture evaporate.
Cauliflower Curry
This cauliflower curry receives most of its aromatic character from garam masala. The exact composition varies between brands, but common ingredients include cumin, coriander, cardamom, cinnamon, cloves, and black pepper. Choose a blend that matches your preferred level of warmth and spice.
Garam masala is aromatic rather than intensely hot. Fresh chilli, cayenne, or chilli flakes can be added when you want more heat. Garlic provides a savoury base, while tahini contributes richness and a mild sesame flavour. For another creamy vegetable meal, try our Curried Parsnip Coconut Stew.
Creating a Creamy Sauce
Unsweetened coconut milk beverage keeps the sauce dairy-free without making it as heavy as canned coconut milk. Check that the product is unflavoured because vanilla or added sugar would be unsuitable. Oat, almond, or soy milk can also work when they meet your dietary requirements.
Chickpea flour thickens the sauce and adds a small amount of protein. Whisk it into the cold liquid until completely smooth before pouring the mixture over the cauliflower. Adding dry flour directly to the hot saucepan could create stubborn lumps. Stir continuously during the final cooking stage because the sauce thickens quickly.
Serving Ideas and Variations
Serve the masala with basmati rice, brown rice, naan, or roasted chickpeas. Crispy tofu turns it into a more substantial meal, while fresh coriander and lemon add colour and brightness. It can also accompany grilled vegetables or a simple lentil dish.
Spinach, green peas, chickpeas, or diced roasted peppers can be folded through the sauce. Add tender leafy vegetables near the end so they retain their colour. Fresh ginger, turmeric, or chilli can be whisked into the coconut milk for a stronger flavour. For another vegetable-based accompaniment, consider our Broccoli Pesto Spread.
Storage and Reheating
Cool leftovers before placing them in an airtight container. Refrigerate for up to four days or freeze for up to two months. The chickpea flour and tahini will continue thickening the sauce during storage, so stir in a small splash of coconut milk or water while reheating.
Warm the dish gently in a saucepan and stir regularly to prevent the sauce from sticking. Reheat only the amount needed and make sure it is thoroughly hot before serving. Follow current FDA safe food-handling guidance when cooling, refrigerating, freezing, and reheating prepared foods.
With its creamy texture, aromatic spices, and versatile serving options, this cauliflower dish offers an easy way to transform a simple vegetable into a colourful and satisfying plant-based meal.
