Ingredients

  • 14-1/2 oz. can petite diced tomatoes
  • 6 oz. can tomato paste
  • 1 to 1-1/2 cups onion chopped
  • 4 14-1/2 oz. cans beef broth
  • 2 cups water
  • 32 oz. package frozen meatballs
  • 1-1/2 cups orzo ditalini, or other small pasta, uncooked
  • Salt and pepper to taste

Garnish:

  • Grated Parmesan cheese

Instructions

  • In a large stockpot over medium heat, mix together diced tomatoes, tomato paste, chopped onion, beef broth, water, frozen meatballs, uncooked pasta, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat to medium-low.
  • Cook the soup, stirring occasionally, for 20 minutes or until the pasta is tender and the meatballs are warmed through.
  • Garnish each serving of Hearty Meatball and Pasta Soup with grated Parmesan cheese.
