Ingredients

  • 1 tablespoon olive oil
  • 3 pounds Kielbasa sausage cut into bite-size pieces
  • 3 onions diced
  • 3 cloves garlic minced
  • 3 cans 16 ounces each kidney beans, drained and rinsed
  • 3 cans 14.5 ounces each diced tomatoes, drained
  • 1 can 14.5 ounces beef broth
  • 1/2 cup long-cooking rice uncooked
  • 1/3 cup fresh basil chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley

Instructions

  • Heat olive oil in a large stockpot over medium heat.
  • Add Kielbasa sausage, diced onions, and minced garlic.
  • Cook until golden; drain any excess oil.
  • Add the drained kidney beans, drained diced tomatoes, beef broth, uncooked long-cooking rice, chopped fresh basil, Italian seasoning, dried oregano, and dried parsley to the pot.
  • Bring the mixture to a boil over medium-high heat.
  • Reduce the heat to low and let the stew simmer for 1 1/2 hours, stirring occasionally.
