  • 1 can 16 oz. kidney beans
  • 1 clove garlic minced
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 tbsp. olive oil
  • ½ cup chopped fresh parsley
  • 1 small fresh zucchini unpeeled and diced
  • 2 celery stalks with leaves finely chopped
  • 2 small carrots peeled and diced
  • 1 small onion minced
  • 1 can 16 oz. whole tomatoes, cut up with a spoon
  • 2 ½ cups water
  • ¾ cup elbow macaroni uncooked
  • ½ cup beef bouillon or tomato juice
  • Salt to taste

Optional Add-ins for a Heartier Soup:

  • 3 medium red potatoes peeled and diced
  • 1 cup shredded cabbage
  • 1 cup frozen green beans thawed

Instructions

  • Place kidney beans in a large kettle and mash them slightly with a fork.
  • Add garlic, salt, pepper, olive oil, and chopped parsley.
  • Stir well.
  • Pour in water and add all vegetables to the kettle.
  • Bring to a boil over medium heat, stirring occasionally.
  • Reduce heat, cover the kettle, and simmer for 1 hour, stirring occasionally.
  • After 1 hour, add macaroni and beef bouillon or tomato juice.
  • Simmer for an additional 15 minutes, stirring occasionally.
  • Add salt to taste.
